No idea if anyone checks this anymore!!! Hopefully some have it on their google reader.
This recipe is a WINNER. My MIL gave it to me and we took it to our small group 4th of July cookout as a side with burgers. But I think it would be even better at like Thanksgiving or something. SO easy and YUMMY. I had to give out the recipe to everyone there!
1 can creamed corn
1 can corn (drained)
1 small box cornbread mix (I recommend sweet cornbread)
8 oz. sour cream
1 ½ cups grated cheddar cheese
1 stick melted butter
Mix together and bake 40 minutes @ 350 degrees until it looks "baked" in the middle. I think I'll use a 13X9 next time since my round casserole dish left it kinda jiggly in the middle. If that happens, just cook a bit longer.

Cooking Tip: Onions
So I learned a cooking tip from my friend Maurine, and it has been such a time and energy saver that I thought it deserved its own post.
When recipes call for chopped onion, use frozen chopped onions! You can buy them in bags in the freezer section. I can't tell you how much I love not having to buy and chop fresh onions!
Thank you, Mo! You have changed my cooking life! If anyone else has cooking tips like this, please post them!

Chicken with Hoison Sauce
This may be a little hard to read, but I scanned it instead of typing it since I'm lazy. It's basically an Asian stir-fry dish, and I served it over rice. You can find hoison sauce in the Asian section of wal-mart or your grocery store. I could drink that stuff.
I cooked this several weeks ago and it was SO GOOD. Just be sure you have everything ready before you start, because the pan will be very hot and will burn stuff fast if you don't stay on top of it and cook things for the right time. This doesn't take long once you start the cooking part, but you don't want to have a crying kid hanging on your knees like I did.
