Italian Meatloaf

I got this recipe from my friend Alicia, and it is FABULOUS and easy. It has replaced my other meatloaf recipe at our house... just so easy and so yummy.

2 beaten eggs
1 c milk
3/4 c (17) saltine crackers - coarsely crushed
1/2 c grated parmesan cheese
1/4 c finely chopped onion
1 tsp worcestershire sauce
1/2 tsp garlic salt
1/4 tsp dried basil
1 1/2 lbs ground beef
ketchup

Combine first 8 ingredients. Add beef and mix well. Shape into 6 individual loaves. Sprinkle each with extra cheese and basil. Squeeze some ketchup on top in a fun design! Bake in a shallow pan @ 350 for 45 minutes.

We like to eat it dipped in more ketchup. Also, ground turkey makes it a great turkey meatloaf!! We're doing weight watchers right now... using ground turkey, 1 egg and 1 egg white, and fat free cheese and crackers makes this about 3 points points per loaf. Enjoy! SO YUMMY!
